There's nothing that quite says "home" like a warm side dish of potatoes. Potatoes are a staple in our house.....fry them, mash them, bake them, or boil them.
These are some of my favorite potato recipes, with the three most important ingredients: Quick prep time, simple ingredients, and delicious!
All my potato recipes can be easily modified by substituting ingredients you have on hand, or adding ingredients your family loves.
And you'll want to be sure you're wearing your custom apron, featuring your child's artwork!

Grandma's Famous Creamy Mashed Potatoes
Ingredients 5 pounds white potatoes 8 oz cream cheese, softened 1 stick butter, softened 1 cup sour cream Salt (dash - to taste)
Peel and boil potatoes, then mash them in a large bowl with an electric mixer. Add softened cream cheese, softened butter, and cream cheese. Add a dash of salt to taste. Serve hot.
If you wish, you can make these potatoes up to 24 hours ahead of time and put them in a casserole dish, cover and refrigerate. Then just warm them up (covered) in a 350 degree oven until hot. |

Oven Roasted Potatoes (It doesn't get any easier than this!)
2 pounds potatoes, cut in large chunks 1/3 cup olive oil 1 envelope Lipton Onion Soup Mix (or Zesty Italian)
Preheat oven to 450 degrees. In large plastic bag, mix all ingredients until evenly coated. Pour potato mixture into shallow baking orroasting pan. Bake, stirring occasionally, 35-40 minutes or until potatoes are tender and brown. If desired, garnish with chopped parsley. Makes about 8 servings.

Sweet Potatoe Casserole (This dish is so good, it could be served as a dessert! It's always a "must have" dish at our family holiday get-togethers.)
Ingredients 4 cups Yams 1/2 cup sugar 2 eggs 1/2 cup butter 1/3 cup milk 1/2 tsp. nutmeg 1/2 tsp. cinnamon 1 tsp. vanilla
Topping Ingredients: 1/3 cup melted butter 1 cup light brown sugar 1/2 cup flour 1 cup quick oats 1/2 cup chopped pecans (optional)
Preheat oven to 350 degrees. Combine all casserole ingredients in a large bowl using an electric mixer. Pour into casserole dish. Next, combine topping ingredients, mixing by hand, then sprinkle over the top of the casserole. Bake approximately 25 minutes, until hot and bubbly.
If you wish, you can make this up to 24 hours ahead of time, and refrigerate (covered) until you're ready to bake. You may need to bake it a little longer if you are heating from the cold refrigerator.

Easy Cheezy Velveeta Potatoes (The kids LOVE this one!)
Ingredients 2 pounds frozen hash browns, thawed 1 pound Velveeta cheese 1 pint half & half OR 1 1/2 cups milk 1/2 cup margarine or butter
Preheat oven to 350 degrees. Place potatoes in 9x13 inch baking dish. Melt cheese, half & half, and butter in a saucepan over low heat. Pour melted mixture over hash browns. Bake 50-60 minutes. |
