All my chicken recipes can be easily modified by substituting ingredients you have on hand, or adding ingredients your family loves.
And you'll want to be sure you're wearing your custom apron, featuring your child's artwork!

Ham & Cheese-stuffed Chicken Breasts
Ingredients
4 Boneless chicken breasts (or 6 or 7 or 8, depending on the size of your family)
4 slices of mozarella cheese (or cheddar, or velveeta, or swiss)
4 slices of deli ham (or turkey, if that's what you have)
6 slices of bacon, fried and crumbled
Small box seedless raisins
Butter
Preheat oven to 350 degrees.
Slice a "pocket" in each chicken breast and stuff with a slice of ham and a slice of cheese.
Place stuffed chicken breasts in glass dish and sprinkle with crumbled bacon and raisins.
Top each chicken breast with a pat of butter. Bake at 350 degrees 30-35 minutes until chicken
is done

Arizona Chicken
(Named by my niece Ash and nephew Dallas, who grew up in Arizona and LOVED this recipe!)
Ingredients
4 boneless, skinless chicken breasts (or more, depending on your family size)

Creamy Chicken & Noodle Casserole
(Nothing says "home" like a casserole, and this one is a family favorite. Perfect to serve on a cold, winter day.)
Ingredients
12 oz. bag of egg noodles
2-3 cups cooked, diced chicken
2 cans cream of chicken soup
2 soup-size cans chicken broth
butter
salt & pepper
Preheat oven to 350 degrees. Cook egg noodles according to package directions. Drain. Combine soup and broth. Add chicken and cooked noodles. Pour into a casserole dish, sprinkle with salt and pepper, and top with a few pats of butter. Bake for 30-35 minutes until hot and bubbly. Yummmmmm.

Crowd Chicken Casserole
(Double this recipe and make two casseroles at once to feed any large, hungry crowd.)
Ingredients
5 cups cooked, diced chicken
5 cups chopped celery
1 bunch green onions, sliced
1 (4-oz) cans chopped green chilies
1/2 cup pitted ripe olives, chopped
1 cups slivered almonds
1 cup sour cream
1 cup mayonnaise
2-3 cups crushed potato chips
3 cups shredded cheddar cheese
Preheat oven to 350 degrees.
Combine the first 6 ingredients. Add 1 cup of the shredded cheese. Combine mayo and sour cream and then toss with the chicken mixture. Spoon into greased 9 x 13 baking dish. Sprinkle with potato chips and remaining cheddar cheese. Bake uncovered for 20-25 minutes until hot and bubbly.
